This blonde ale was created by bottle conditioning Day Drinker Belgian Blonde with Brettanomyces. Aromas of orange blossom, rising dough, and Saaz hops are followed by a bitter and dry finish.

In a large mash tun, combine the pale malt, Pilsner malt, and caramel malt with 5 gallons of water at 152°F (67°C). Stir well and let it rest for 60 minutes.

Mashing

After mashing, sparge the grains with hot water until you collect about 6.5 gallons of wort in your brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add in 1.5 oz of Saaz hops and boil for 60 minutes. With 15 minutes left in the boil, add the orange zest.

Boiling

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches approximately 70°F (21°C).

Cooling the Wort

Transfer the cooled wort into a sanitized fermenter. Pitch both the Brettanomyces and the Belgian ale yeast. Seal the fermenter with an airlock and ferment at room temperature for 1-2 weeks.

Fermentation

After fermentation is complete, dissolve 3 oz of priming sugar in a small amount of boiling water. Add this to the bottling bucket, then siphon the beer into the bottle, leaving some headspace. Cap the bottles.

Bottling

Store the bottles at room temperature for 1-2 weeks for bottle conditioning. After conditioning, chill the bottles in the fridge before serving.
