Drawing from Japanese influence, this yuzu lemon rice lager delivers a crisp, delicate body with bright citrus notes and a clean, refreshing finish. Light, zesty, and endlessly drinkable, an East-meets-West twist fit for any occasion.

In a small saucepan combine 0.25 cups water and 0.5 cups granulated sugar. Heat gently over medium-low, stirring occasionally until the sugar fully dissolves and the mixture is just simmering. Remove from heat.

Make the syrup

Allow the syrup to cool for 2–3 minutes off heat, then stir in 0.5 cups fresh yuzu juice, 0.25 cups fresh lemon juice, 1 tablespoon yuzu or lemon zest and a pinch of fine sea salt. Stir to combine. Taste and adjust: if too tart, add up to 1 tablespoon more sugar (dissolve into warm syrup before cooling).

Strain the cordial through a fine mesh sieve into a clean container to remove zest and any pulp. Chill until cold (at least 15–20 minutes). The cordial yields a concentrated, bright citrus syrup to flavor the shandy.

Chill your glassware and beer ahead of time. For one 12–16 oz serving use 4 cups (approx. 32 fl oz) of light rice lager only if making a pitcher; for single-serve scale to 10–12 oz beer. This recipe proportions are for roughly 1 pitcher (serves 4).

In a large pitcher add the chilled yuzu-lemon cordial. For a balanced, light shandy use about 3 tablespoons (45 ml) cordial per 12 fl oz beer. For the pictured proportions (4 cups beer base + 2 cups water), add 6 tablespoons (90 ml) cordial into the pitcher, then pour in the 4 cups chilled rice lager slowly to preserve carbonation. Stir gently once with a long spoon — avoid vigorous stirring that will flatten the beer.

Combine cordial and beer

If you prefer a lighter, more quenching profile (lower ABV and more refreshing mouthfeel), add the 2 cups chilled water to the pitcher and stir gently once to combine. This creates the delicate, clean body characteristic of the Shogun Shandy.

Taste and adjust: if you want more citrus brightness, add 1 teaspoon increments of the cordial; if too sweet or citrus-forward, add a splash more chilled beer or water to rebalance. Keep movements gentle to maintain effervescence.

Fill chilled glasses partially with ice if desired (Shandy is often served without ice to preserve carbonation; add ice only if serving in warm conditions).

Pour the shandy from the pitcher into glasses at an angle to preserve head and effervescence. Each glass should receive a thin slice or wheel of lemon or yuzu on the rim or floated on top.

Garnish each glass with a sprig of fresh mint if using, gently slap the mint to release aromatics before placing it on the rim. Serve immediately while effervescent and bright.
