Burger Patties
Gently mix the ingredients with your hands or a fork just until combined — do not overwork the meat to avoid tough patties. Divide the mixture into 2 equal portions and shape each into a flat patty about 3/4-inch thick, slightly wider than the buns (they will shrink while cooking). Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.
Cook the patties 3-4 minutes on the first side without pressing them (for medium). Flip and cook another 3-4 minutes, or until internal temperature reaches 160°F (71°C) for well-done, or 155°F (68°C) for medium-well. If you prefer a cheesier melt, continue to the cheese sauce step and spoon warm sauce over patties during the last 30–60 seconds of cooking then cover briefly.
Spicy Cheese Sauce
While the patties cook, make the cheese sauce. In a small saucepan over medium heat, melt 1 tbsp butter until foaming but not browned.
Whisk in 1 tbsp all-purpose flour and cook 30–60 seconds to eliminate the raw flour taste, whisking constantly.
Slowly whisk in 3/4 cup whole milk, bringing the mixture to a gentle simmer. Continue whisking until slightly thickened, about 2–3 minutes.
Reduce heat to low and whisk in 3/4 cup shredded cheddar and 1 tbsp softened cream cheese until smooth. Stir in 1 tsp chopped pickled ghost pepper (or a few drops of ghost pepper hot sauce) and 1/4 tsp smoked paprika. Season with 1/4 tsp kosher salt and taste carefully; the sauce will be very spicy. Keep the sauce warm on the lowest heat, stirring occasionally to prevent skin forming.
Build & Toppings
Prepare the mayo: In a small bowl, combine 2 tbsp mayonnaise with 1/2 tsp lime juice (optional) and a pinch of salt. Mix until smooth.
Assemble the burgers: Spread a thin layer of the lime mayo on the bottom bun. Place an iceberg lettuce leaf on the mayo to create a moisture barrier. Add 2 tomato slices, then place the cooked ghost pepper patty on top.
Spoon 2–3 tablespoons of the spicy cheese sauce over each patty (or more to taste). Top with red onion rings and pickle slices. Finish with the top bun. Serve immediately with extra sauce on the side and cold beverages to help with the heat.
Safety note: Ghost pepper adds extreme heat. Adjust the amount of fresh ghost pepper and pickled ghost pepper in the sauce to your tolerance. Use gloves when handling fresh peppers and wash hands thoroughly afterward.
