Method
Classic Tomato BBQ Sauce
Combine and simmer
In a medium saucepan, combine 2 cups ketchup, 1 cup apple cider vinegar, and 1 cup packed brown sugar. Stir to dissolve the sugar.
Add 2 tablespoons Worcestershire sauce, 1 tablespoon yellow mustard, 2 teaspoons smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon black pepper, and 1 teaspoon kosher salt. Stir until uniform.
Bring the mixture to a gentle simmer over medium-low heat. Reduce heat to low and simmer, uncovered, stirring occasionally, for 15–20 minutes to meld flavors and thicken slightly.
Let cool and transfer to a sterilized jar. Keeps in the refrigerator for up to 2 weeks.
Vinegar-Style (Carolina) BBQ Sauce
In a small saucepan or bowl, combine 1 cup apple cider vinegar and 2 tablespoons apple cider or chicken stock.
Whisk in 2 tablespoons brown sugar until mostly dissolved, then stir in 1 teaspoon red pepper flakes, 1 teaspoon hot sauce (or a pinch of cayenne), 1 teaspoon kosher salt, 1/2 teaspoon black pepper, and 1 tablespoon minced garlic.
Warm gently over low heat for 3–5 minutes just to meld flavors — do not boil. Taste and adjust: more sugar to tame acidity, more red pepper flakes for heat, or extra stock to mellow.
Use immediately as a mop or finishing sauce for pulled pork, or store in the refrigerator for up to 2 weeks. Shake well before using.
Mustard-Based Sauce
In a bowl, whisk together 1 cup yellow mustard, 1 tablespoon apple cider vinegar, and 2 tablespoons brown sugar until the sugar dissolves.
Stir in 1 teaspoon Worcestershire sauce, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon black pepper, 1/2 teaspoon salt, and 1/2 teaspoon hot sauce if using.
Taste and adjust: add a touch more vinegar for tang or sugar for sweetness. This sauce is ready to use immediately and pairs well with pork and grilled chicken. Store refrigerated up to 2 weeks.
Sweet & Spicy Asian-Style BBQ Sauce
In a small saucepan, combine 1/2 cup hoisin sauce, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, and 2 tablespoons brown sugar. Stir to combine.
Warm over medium-low heat for 3–5 minutes, stirring, until fragrant and slightly thickened. If too thick, add 1 tablespoon water and stir to reach desired consistency.
Remove from heat and let cool. Use as a glaze for grilled meats or as a dipping sauce. Store refrigerated up to 1 week.
