    Marinate the beef

    In a medium bowl combine 1/4 cup soy sauce, 2 tbsp mirin, 1 tbsp sake, 1 tbsp brown sugar, 1 tsp grated garlic, 1 tsp grated ginger, and 1 tsp sesame oil. Stir until sugar dissolves. Add the thinly sliced beef and toss to coat. Marinate at room temperature for 15 minutes or refrigerate up to 1 hour.

    Cook the beef

    Heat a large skillet or cast-iron pan over high heat until very hot. Add 1 tsp vegetable oil and swirl. Add the marinated beef in a single layer (work in batches if needed) and sear without stirring for 30–45 seconds, then stir and continue cooking until beef is just cooked through and edges caramelize, about 1–2 minutes total per batch. Return all cooked beef to the pan, sprinkle with 1 tsp toasted sesame seeds and 2 tbsp thinly sliced green onions, toss briefly to combine, then remove from heat.

Sauces & Slaw

    Make spicy mayo

    In a small bowl whisk together 1/4 cup mayo, 1 tsp sriracha, and 1 tsp rice vinegar until smooth. Taste and adjust heat or acidity to preference. Transfer to a squeeze bottle or small bowl for assembly.

    Prepare quick slaw

    In a medium bowl combine 2 cups shredded cabbage and 1/2 cup julienned carrot. Add 1/2 tsp soy sauce and 1/2 tsp toasted sesame oil. Toss well to coat. Let sit while beef cooks so flavors marry.

Taco Assembly & Garnishes

    Warm tortillas

    Warm tortillas in a dry skillet over medium heat for 15–20 seconds per side or wrap in foil and heat in a 350°F (175°C) oven for 5–7 minutes. Keep warm, wrapped in a clean towel.

    Assemble tacos

    Place a warm tortilla on a plate. Add about 2 oz (roughly 1/8 of the cooked beef) of yakiniku beef in the center. Top with a small handful of the quick slaw. Drizzle 1/2–1 tsp of the spicy mayo over the slaw. Add a few pickled jalapeños or togarashi pickles if using and garnish with a few cilantro leaves. Repeat for remaining tortillas.

    Serve tacos immediately with lime wedges on the side to squeeze over tacos just before eating.
