Prepare strawberries
Rinse the strawberries, hulled and quartered so pieces are roughly uniform (about 4 cups). Set aside.

In a medium saucepan combine granulated sugar and quartered strawberries. Let sit 10 minutes so the strawberries release some juice.

In a small bowl whisk the cornstarch with cold water until smooth to make a slurry.

Place the saucepan over medium heat. Add the lemon juice and bring the strawberry mixture to a gentle simmer, stirring occasionally.

When the mixture simmers, stir in the cornstarch slurry and continue to simmer for 2–3 minutes until the mixture thickens slightly and the strawberries are softened but still hold shape. Remove from heat and let cool slightly. Taste and adjust sugar if needed.
White Chocolate Sauce & Finish

Chop the white chocolate finely if using a block; measure 1 cup. Place white chocolate in a heatproof bowl.

In a small saucepan, warm the heavy cream over medium-low heat just until it begins to steam and small bubbles form at the edge (do not boil). Remove from heat.

Pour the hot cream over the white chocolate and let sit 1 minute to melt. Stir gently until smooth and glossy. If needed, return briefly to very low heat while stirring to fully combine, but avoid overheating (white chocolate can seize).

Stir in the unsalted butter, vanilla extract and sea salt until fully incorporated. Taste and adjust salt or vanilla if desired. Keep warm or allow to come to room temperature for a thicker sauce.

Spoon about 3/4 cup of the warm (or room temperature) strawberry filling over the yogurt in each serving (reserve a little for topping if you like).

Drizzle 2–3 tablespoons of the white chocolate sauce over the strawberries in each serving. For a thinner drizzle, warm the sauce slightly; for a thicker ribbon let it cool a bit.

Garnish each serving with a small mint leaf (optional). Serve immediately if you want warm fruit and sauce, or chill for 30–60 minutes for a cooler dessert.
