Method
Cocktail
Prepare glass
If you prefer a salted rim, run a lime wedge around the edge of an old-fashioned glass and dip the rim into a shallow plate of coarse sea salt or smoked salt. Set glass aside.
Combine ingredients
In a cocktail shaker, add the Patrón Añejo tequila, fresh lime juice, agave nectar, orange liqueur, and aromatic bitters (if using).
Add ice and shake
Fill the shaker with ice and shake vigorously for 10–15 seconds until the shaker is very cold to the touch and the ingredients are well chilled and slightly diluted.
Strain over ice
Place a large clear ice cube or three large ice cubes into the prepared old-fashioned glass. Double-strain the cocktail into the glass to remove any small ice shards and pulp, pouring the chilled mixture over the ice.
Garnish & Finish
Express the oils from an orange peel over the drink by holding the peel skin-side down, giving it a firm squeeze so the oils spray onto the surface. Optionally, briefly flame the peel over the drink to caramelize the oils and drop the peel in as garnish. Finish with a lime wheel or twist on the rim.
