Clarified Apple & Lychee Cordial (make ahead or use store-bought)

Combine juices

If making cordial: In a small pitcher, combine 1 cup filtered apple juice, the liquid from canned lychees (reserve fruit for garnish or muddle), 2 tbsp lychee syrup (or simple syrup), and 1 tbsp fresh lemon juice. Stir to combine.

Clarify (optional quick method)

To clarify quickly at home: Chill the mixture and pour through a very fine mesh or coffee filter to remove pulp. For a clearer cordial, allow sediment to settle in fridge for 2–4 hours and decant the clear top layer. Store in refrigerator until needed.

Adjust sweetness

Taste the cordial and adjust sweetness with extra syrup if needed. You should end up with a slightly sweet, fragrant lychee-apple liquid concentrated enough to contribute brightness and body to the cocktail.

Wasabi Component

In a small ramekin, blend 0.25 tsp wasabi paste with 0.5 tsp warm water to make a smooth diluted wasabi emulsion. This thins the paste so it integrates into the cocktail and distributes heat without clumping. Set aside.

Assemble Cocktail

Prepare the glass: If desired, rim a rocks or coupe glass by wiping a lime wedge around the edge and dipping into coarse salt or chili-salt. Chill the glass briefly.

Add ingredients to a cocktail shaker: Pour 2 oz Patrón El Alto tequila, 0.5 oz Daiyame sochu, 1 oz clarified apple & lychee cordial, 0.75 oz fresh lime juice, and 0.25 oz agave syrup (optional) into the shaker.

Add the wasabi emulsion: Spoon the diluted wasabi into the shaker. The small amount keeps the wasabi bright but restrained; adjust in future batches if you prefer more or less heat.

Dry shake: Seal the shaker and shake vigorously without ice for 10–12 seconds. This helps emulsify the wasabi into the mixture and build a silky texture.

Wet shake: Add ice (enough to fill the shaker about two-thirds) and shake vigorously for 12–18 seconds until well chilled and slightly diluted.

Strain: Double-strain the cocktail into the prepared chilled glass using a Hawthorne strainer and fine mesh strainer to remove any tiny wasabi or pulp particles.

Garnish and finish: Thread one peeled lychee (or a pierced lychee with a small lime wheel) on a pick and rest on the rim or float in the drink. Express a light lime oil over the top if desired.

Serve immediately: Present the cocktail immediately while cold and aromatic.
