Bagel & Toasting

    Prepare bagels

    Slice chia seed bagels in half and spread 1/2 tablespoon butter or brush olive oil on each cut face. Set aside for toasting.

    Toast: When ready to assemble, toast the bagel halves in a hot skillet (medium-high) cut-side down for 1–2 minutes until golden, or use a toaster. Keep warm.

Hash Browns

    Make potato mixture

    If using whole potatoes, grate and put in a clean towel; squeeze out as much moisture as possible until mostly dry. Combine grated potato, grated onion, flour, beaten egg, salt, and pepper in a bowl; mix until cohesive.

    Fry: Heat 2 tablespoons vegetable oil in a nonstick or cast-iron skillet over medium-high heat. Spoon 1/2 cup portions of the potato mixture into the skillet and flatten into 3–4 inch patties. Fry 3–4 minutes per side until deep golden and crisp. Add the remaining tablespoon oil as needed. Transfer to a paper towel–lined plate and keep warm in a low oven (90–100°C / 200°F) while finishing other components.

Bacon

    Cook bacon: In a separate skillet over medium heat, cook the smoky cured bacon slices until browned and crisp (about 3–5 minutes per side depending on thickness). Transfer to paper towels to drain. Reserve 1 teaspoon of bacon fat in the pan for flavor if desired.

Refried Beans

    Warm beans: In a small saucepan or skillet, heat 1 teaspoon oil or reserved bacon fat over medium. Add refried beans, cumin, salt, and lime juice and stir to combine. Cook, stirring, until heated through and slightly loosened (add 1–2 tablespoons water if too stiff), about 3–5 minutes. Keep warm.

Guacamole & Garnish

    Make quick guacamole: In a bowl, mash the avocado with lime juice until slightly chunky. Fold in diced tomato, minced red onion, chopped cilantro, salt, and crushed red pepper or hot sauce if using. Taste and adjust seasoning. Keep chilled until plating.

Eggs

    Fry eggs

    Heat 1 tablespoon oil or butter in a nonstick skillet over medium heat. Crack two eggs into the pan one at a time. Cook until whites are set but yolks remain runny, about 2–3 minutes for sunny-side or 3–4 minutes if spoon-basting. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper. If you prefer over-easy, gently flip and cook 20–30 seconds more.

Assemble & Serve

    Build each bagel: Spread 1/4 cup warm refried beans on the bottom half of each toasted chia seed bagel. Place one hot hash brown patty on top of the beans. Add 3 slices of cooked smoky bacon (or portion as desired) over the hash brown.

    Top with egg and guacamole: Gently place a fried egg on the bacon. Spoon 2 tablespoons of guacamole beside or over the egg. Sprinkle 1 tablespoon crumbled cotija or shredded cheddar if using and garnish with cilantro leaves.

    Finish and serve: Close with the top bagel half if desired or serve open-faced. Serve immediately with lime wedges on the side for squeezing.
