    Prepare avocados

    Halve the avocados, remove pits, and scoop flesh into a medium mixing bowl.

    Mash and season

    Using a fork or potato masher, mash the avocado to your desired texture (chunky or smooth). Immediately add the lime juice and mix to prevent browning.

    Add aromatics

    Fold in the diced red onion, chopped cilantro, diced jalapeño, and diced tomato (if using). Stir until evenly distributed.

    Finish base

    Season with sea salt and black pepper. Taste and adjust salt, pepper, or lime juice as needed. Set the guacamole aside in a bowl; cover lightly with plastic wrap (touching the surface) if you need to wait before serving.

Superfood Toppings

    Toast seeds (optional)

    Heat a small dry skillet over medium heat. Add the pumpkin seeds and sunflower seeds. Toast, stirring frequently, until they begin to pop lightly and turn fragrant and golden at the edges, about 3–4 minutes. Remove from heat to prevent burning.

    Season seeds

    While still warm, transfer the toasted seeds to a small bowl. Drizzle with the olive oil, sprinkle with smoked paprika, and toss to coat. If you like a touch of sweetness to contrast the pomegranate, add the optional honey or maple syrup and mix briefly.

    Assemble and garnish

    Spoon the prepared guacamole into a shallow serving bowl and smooth the top. Sprinkle the seasoned pumpkin and sunflower seeds evenly over the guacamole. Scatter the pomegranate seeds on top for bursts of color and tartness. If desired, finish with an extra pinch of flaky sea salt and a small drizzle of olive oil.

    Serve immediately with tortilla chips, vegetable crudités, or whole-grain crackers. If you must store it, cover the surface with plastic wrap to minimize air exposure and refrigerate for up to 24 hours; add toppings just before serving to keep them crunchy.
