Edamame

Method

Edamame

  1. 1

    Bring water to steam

Pour 1 cup of water into a medium saucepan and insert a steamer basket or heatproof colander so it sits above the water. Bring the water to a gentle boil over medium-high heat until producing steady steam (about 3–5 minutes).

  2. 2

    Steam edamame

Add 1 cup frozen edamame (in pods) to the steamer basket in a single layer if possible. Cover the saucepan with a tight-fitting lid and steam until the pods are bright green, tender and heated through, about 4–6 minutes. If you prefer a slightly firmer bite, steam 3–4 minutes; for softer pods, 6 minutes.

  3. 3

    Drain and season

Remove the steamer basket and transfer the hot edamame to a serving bowl. Immediately sprinkle 1 teaspoon Maldon sea salt evenly over the pods so the flakes adhere. If using, drizzle 1 teaspoon toasted sesame oil and squeeze a little lemon from wedges (about 1 tablespoon) over the pods and toss gently to coat.

  4. 4

    Serve

Serve warm; to eat, pop the beans from the pods directly into your mouth and discard the shells. Adjust additional Maldon sea salt to taste.
