Prepare glass rim
If you want a smoked-salt rim, rub the cut side of the lime wedge around the outer edge of a rocks glass. Spread the coarse smoked sea salt on a small plate and gently press the wet rim into the salt so the salt adheres evenly. Set the glass aside.

Combine ingredients
Fill a cocktail shaker with 1 cup of ice. Add 2 oz Clase Azul Reposado, 0.75 oz fresh lime juice, 0.5 oz agave nectar, 0.5 oz orange liqueur, 0.5 oz fresh grapefruit juice and 2 dashes of bitters.

Shake
Secure the shaker lid and shake vigorously for 12–15 seconds until the shaker is very cold and slightly frosted. This chills and dilutes the cocktail to balance the tequila and citrus.

Strain and serve
Fill the prepared rocks glass with fresh serving ice. Double-strain the cocktail into the glass using both the shaker strainer and a fine mesh strainer to remove small pulp and ice shards.

Finish & garnish
Grate a small pinch (about 1 tsp) of smoked sea salt over the top of the drink to add an aromatic finish. Express a grapefruit twist over the cocktail to release oils, then drop the twist into the glass. Optionally garnish with a sprig of micro cilantro or fresh oregano laid across the top.

Serve immediately. Sip slowly to enjoy the tequila's complexity balanced by citrus, agave sweetness and the faint smokiness from the salt.
