Prepare glass
If you want a lightly sweet rim, moisten the outer rim of an old-fashioned glass with a lime wedge, then dip lightly into the dark demerara sugar so a thin coating adheres. Set the glass aside and chill briefly in the freezer or fill with a large ice cube to cool while you build the cocktail.

Mix
In a cocktail shaker or mixing glass, add 2 oz Bacardi Ocho, 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice, 0.5 oz simple syrup, 0.25 oz orange curaçao, and 2 dashes Angostura bitters.

Shake or stir
If you prefer a slightly frothy, bright drink, add ice to the shaker and shake vigorously for about 10–12 seconds until well chilled. Alternatively, for a smoother, silkier texture, add ice and stir in a mixing glass for 20–30 seconds until well chilled and properly diluted.

Strain & serve
Discard the chilling ice from the prepared glass if you used it to chill; place a large fresh ice cube in the glass. Double-strain the cocktail (using the shaker strainer and a fine mesh sieve if available) into the prepared old-fashioned glass over the large ice cube.

Garnish & finish
Express the oils of a lime peel twist over the surface of the drink by holding the twist skin-side down and giving it a quick snap above the glass, then drop the twist into the drink as garnish. Optionally add a final tiny sprinkle of demerara sugar on the rim for aroma. Serve immediately.
