Method

Preparing the Meat

1

Cook the Ground Beef

In a skillet over medium heat, add the ground beef. Season with salt and pepper to taste. Cook until browned and fully cooked, about 8-10 minutes. Drain excess fat and set aside.

2

Cook the Chorizo

In the same skillet, add the chorizo sausage. Cook for about 5-7 minutes until browned and heated through. Slice and set aside with the ground beef.

3

Fry the Pork Belly

In a separate pan, heat oil over medium-high heat. Add the pork belly and fry until crispy, about 5-8 minutes. Remove and drain on paper towels.

4

Cook the Chicken Thigh

In a pot, add the chicken thigh with water and season with salt. Cook over medium heat until fully cooked, about 15-20 minutes. Shred and set aside.

Cooking the Beans and Rice

5

Cook the Red Beans

Soak the red beans overnight in water. Drain and place in a pot with fresh water. Add garlic, onion, and bay leaf. Cook on medium heat until beans are tender, about 1-1.5 hours. Season with salt.

6

Cook the White Rice

In a separate pot, rinse the white rice under cold water. Add to a pot with double the amount of water. Bring to a boil, then cover and reduce heat to low. Cook for 15-20 minutes until rice is tender and water is absorbed.

Preparing Toppings and Sides

7

Slice the Avocado

Cut the avocado in half, remove the pit, and slice into wedges. Set aside.

8

Fry the Plantains

In a pan, heat oil over medium heat. Slice the plantains and fry until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

9

Prepare the Arepas

Cook the corn arepas as per package instructions or grill until golden brown on both sides.

10

Prepare the Lime and Cilantro

Cut the lime into wedges and chop the fresh cilantro. Set aside for serving.
