Form Patties
Divide the ground beef into two equal portions (about 8 oz each). Gently form into patties slightly larger than the buns, about 3/4 inch thick. Press a shallow dimple in the center of each patty to help them cook evenly. Do not overwork the meat.

Season
Season both sides of each patty with kosher salt, black pepper and garlic powder right before cooking.

Grill or Sear
Heat a grill or heavy skillet (cast iron) over high heat until very hot. Brush the grill grates or skillet with 1 tablespoon vegetable oil. Add the patties and cook 3-4 minutes per side for medium (adjust time for desired doneness). Avoid pressing down on patties. When you flip the patties the second time (or with about 1 minute remaining), place a slice of Swiss cheese on each patty to melt.

Sauté Onions & Mushrooms
In a large skillet over medium-high heat, add 1 tablespoon vegetable oil. When hot, add the onion and sauté 3 minutes until beginning to brown. Add the mushrooms and continue to cook 3-4 minutes until mushrooms release moisture and both are nicely browned.

Season & Finish
Lower heat to medium. Stir in 1 tablespoon soy sauce, 1 teaspoon red wine vinegar, 1/4 teaspoon ground cumin, 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook 1 more minute until liquid reduces slightly. Taste and adjust seasoning. If using, stir in 1 tablespoon chopped fresh cilantro just before removing from heat. Keep warm.

Toast Buns
Split the burger buns. Butter each cut side with 1/2 tablespoon butter. Place buttered sides down on a hot skillet or grill and toast until golden brown, about 1-2 minutes. Remove and set aside.

Assemble Burgers
Spread 2 tablespoons signature mayo on the bottom half of each toasted bun. Place a lettuce leaf on the mayo, then a slice of tomato (season tomato lightly with a pinch of salt if desired), and a few raw red onion rings. Place the cheese-topped patty onto the prepared bun. Spoon a generous portion (about half) of the sautéed onions and mushrooms over each patty. Add any remaining sautéed vegetables on top or to the side.

Finish & Serve
Spread remaining mayo on the inside of the top bun and close the burger. Serve immediately while hot, with optional fries or a simple side salad.
