Method
For the Lomo (sirloin)

Sear
Heat a large skillet over medium-high heat until very hot (about 2–3 minutes). Add 2 tbs vegetable oil and swirl to coat. Add steak pieces in a single layer without overcrowding (cook in batches if needed). Sear 1.5–2 minutes on the first side until brown, then flip and cook another 1–2 minutes for medium-rare to medium depending on thickness. For well-done for kids, cook an additional 1 minute per side.

Finish with butter
Reduce heat to medium-low, add 1 tbs unsalted butter to the pan. Spoon melted butter over the steak pieces for 30 seconds to 1 minute to add flavor and gloss.

Rest and garnish
Transfer steak pieces to a plate and let rest 3–4 minutes. Sprinkle with chopped fresh parsley if using. Keep warm while finishing fries.
For the French fries

Prep potatoes
If not already cut, peel (optional) and cut russet potatoes into 1/4–1/2-inch sticks. Rinse the cut fries under cold water until water runs mostly clear to remove excess starch, then drain and pat very dry with clean towels. Measure about 3 cups of cut fries.

Frying method (deep fry)
Pour vegetable oil into a heavy pot or deep fryer and heat to 325°F (163°C) for the first blanch. Fry the potatoes in small batches for 3–4 minutes until soft but not browned. Remove and drain on paper towels. Increase oil temperature to 375°F (190°C). Fry the blanched fries again in batches for 2–3 minutes until golden and crisp. Drain on paper towels and immediately season with 1 tsp kosher salt and 1 tsp paprika if using.

Air-fryer / oven alternative
For air fryer: toss dried fries with 1 tbs oil, arrange in a single layer and air-fry at 400°F (200°C) for 12–16 minutes, shaking halfway, until crisp and golden. For oven: toss fries with 1–2 tbs oil, spread on a baking sheet in a single layer and roast at 425°F (220°C) for 25–30 minutes, turning halfway, until golden and crisp. Season immediately with salt and paprika.
Plating and serving

Arrange a portion of fries and several pieces of the sautéed sirloin on a child's plate. Add small ramelets of ketchup and mayonnaise for dipping if desired. Ensure steak is cooled slightly for kids before serving.
