Fish & Batter

    Prepare fish

    Pat the tilapia fillets dry with paper towels. Cut into child-friendly portions (about 2–3 oz each). Season both sides with 0.5 tsp salt, 0.25 tsp black pepper, and 0.5 tsp paprika. Set on a plate.

    Make batter

    In a medium bowl whisk together 3 tbs flour, 1 tbs cornstarch, 0.5 tsp baking powder, 0.5 tsp salt, and 0.25 tsp black pepper. In a separate small bowl beat 1 egg lightly, then stir in 1/2 cup cold club soda. Pour wet into dry and whisk just until combined — a few small lumps are fine. The batter should be thick but drizzleable; if too thick add 1–2 tbs more soda.

    Dredge fish

    Place 1/2 cup flour for dredging in a shallow dish. One at a time, lightly coat each seasoned fillet in the flour, shaking off excess, then dip into the batter to fully coat. Let excess batter drip back into the bowl.

Fries

    Prep potatoes: scrub and peel if desired. Cut each potato into even sticks about 1/2 inch thick so they cook evenly. Rinse cut fries under cold water until water runs clear to remove excess starch, then pat them very dry with towels.

    Cook fries (shallow fry method): In a heavy skillet or Dutch oven add 2 cups vegetable oil for fries and heat over medium-high to 350°F (175°C). If you don't have a thermometer, test with a small bread cube — it should sizzle steadily and brown in about 45–60 seconds. Fry potatoes in a single layer (work in small batches) for 4–6 minutes until tender and starting to turn pale golden. Remove to a paper towel–lined tray. Increase heat slightly to 375°F (190°C) and return fries in batches to crisp for another 2–3 minutes until golden and crisp. Drain on paper towels, immediately season with 1 tsp salt and 0.25 tsp pepper, and keep warm in a low oven (200°F / 95°C) while you fry the fish.

Oil for fish

    Heat oil for fish: In a separate deep skillet or small pot pour 2 cups oil and heat to 350°F (175°C). Use a thermometer if available; otherwise test with a small amount of batter — it should sizzle and rise to the surface quickly.

    Fry fish: When oil is hot, carefully lower battered fillets into the oil, 2–3 pieces at a time depending on pot size, to avoid crowding. Fry for 3–4 minutes, turning once with tongs, until batter is puffed and a deep golden brown and the fish registers 145°F (63°C) or flakes easily. Remove to a wire rack or paper towels to drain. Repeat with remaining pieces, returning oil to temperature between batches.

    Finish and rest: Briefly rest fish 1–2 minutes so juices redistribute. If desired, sprinkle chopped parsley over fries and fish and squeeze lemon wedges over fish just before serving.

Serving & Dipping

    Plate: Divide fries and fish into kid-sized portions (suggest 2–3 small pieces of fish and a small handful of fries per child). Serve with 1–2 tbsp ketchup or tartar sauce per serving and lemon wedges on the side.

    Safety & leftovers: Allow food to cool slightly before giving to children. Store any leftovers in an airtight container in the refrigerator for up to 2 days. Re-crisp fries and fish in a 375°F (190°C) oven for 8–10 minutes rather than microwaving to preserve texture.
