Prepare base
In a cocktail shaker, add 2 oz pisco (or vodka), 3 tbsp fresh passion fruit pulp (strain seeds if you prefer less texture), 0.5 oz fresh lime juice, 0.5 oz simple syrup, and 2 dashes Angostura bitters.

Shake
Fill the shaker with ice (about 1 cup), cap, and shake vigorously for 10–15 seconds until the outside of the shaker is cold and slightly frosted.

Strain
Double-strain the mixture into a highball or Collins glass filled with fresh ice to remove pulp and seeds (use a fine mesh strainer if you want a smoother drink).

Float half a passion fruit or a thin passion fruit wheel on top of the drink, add a lime wheel to the rim, and tuck a mint sprig beside the fruit if using. Serve immediately with a straw.
