    Prepare glass

    Select a highball or Collins glass (10–12 oz). Fill the glass with cubed ice until nearly full to keep the drink well chilled.

    Add spirit and lime

    Pour 2 oz of pisco over the ice, then add 0.75 oz (about 3/4 oz) of freshly squeezed lime juice. Fresh juice is recommended for brightness.

    Bitters

    Add 2 dashes of Angostura bitters over the pisco and lime. The bitters add aromatic depth and balance the sweetness of the ginger ale.

    Top with ginger ale

    Gently top the mixture with 4 oz of chilled ginger ale. Pour slowly down the side or over the back of a spoon to preserve carbonation and create a layered look if desired. Give the drink one gentle stir (1–2 turns) to lightly integrate ingredients without losing fizz.

    Garnish and serve

    Garnish with a lime wheel or wedge on the rim and, if using, a candied ginger or thin fresh ginger slice skewered on a cocktail pick. Serve immediately with a straw or stirrer.

    Optional adjustments

    For a slightly sweeter Chilcano, substitute part of the ginger ale with ginger beer or add 0.25–0.5 oz simple syrup. For more citrus brightness, increase lime to 1 oz. If using bottled lime juice, reduce quantity slightly to taste.
