Burger Patties & Seasoning

    Form patties

    Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a loose ball, then flatten to a 3/4-inch thick patty slightly wider than the bun. Do not overwork the meat. Using your thumb, make a shallow dimple in the center of each patty to reduce puffing during cooking.

    Season

    Pat both sides of each patty dry with a paper towel. Sprinkle 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper evenly over each side (reserve remaining salt and pepper for later if desired). Let patties rest at room temperature for 10 minutes while you prepare other components.

    Preheat grill or skillet

    Preheat a gas grill or cast-iron skillet/griddle to medium-high (about 400–450°F / 200–230°C). Brush the grate or skillet lightly with 1 tablespoon vegetable oil to prevent sticking.

    Cook patties

    Place patties on the hot grill or skillet. Cook without moving for 3–4 minutes to develop a sear. Flip once and cook 2–3 minutes for medium-rare to medium (adjust time for desired doneness). During the last 30–45 seconds of cooking, place one slice of cheddar on each patty and close grill lid or cover skillet to melt cheese for a quick minute.

Buns & Cheese

    Toast buns

    While the patties rest (2–3 minutes after cooking), spread about 1 teaspoon unsalted butter on the cut faces of each bun half. Place buns face down on the grill or skillet until golden and lightly crisp, about 30–60 seconds. Watch closely to avoid burning.

Signature Mayo

    Make the mayo

    In a small bowl, combine 1/4 cup mayonnaise, 1 teaspoon Dijon mustard, 1/2 teaspoon lemon juice, 1/4 teaspoon Worcestershire sauce, 1/8 teaspoon garlic powder, 1/8 teaspoon black pepper, and a pinch (1/16 tsp) of salt. Whisk until smooth and taste; adjust seasoning to preference. Keep chilled until assembly.

Fresh Toppings & Assembly

    Prepare toppings

    Pat lettuce leaves dry and set aside. Trim tomato slices if needed to fit bun. Separate onion into individual rings.

    Assemble burger

    Spread about 1 tablespoon of the signature mayo on the bottom half of each toasted bun. Place a lettuce leaf on the mayo, followed by a slice or two of tomato, then the cheddar-topped burger patty. Add 2 onion rings on top of the patty (or to taste). Spread a thin layer of mayo on the top bun and place it crown-side down on the burger.

    Serve

    Serve immediately while hot with optional side of fries or pickles. If preparing for multiple people, keep patties loosely tented with foil for up to 5 minutes before assembling to retain heat.
