Prepare the Pork Char Siew

Marinate the pork belly in a mixture of soy sauce and mirin for at least 2 hours or overnight. Preheat the oven to 300°F (150°C) and roast the pork for about 2-3 hours until tender. Let it cool, then slice thinly.

Make the Ajitama Eggs

Boil the eggs in water for 7 minutes for a soft yolk. Remove and place in ice water. Once cooled, peel the eggs and marinate them in a mixture of soy sauce and mirin for at least 30 minutes.

Cook the Ramen Noodles

In a large pot, bring water to a boil. Add the ramen noodles and cook according to package instructions until al dente. Drain and set aside.

Sauté the Wood Ear Mushrooms and Broccolini

In a skillet, heat a bit of oil over medium heat. Add the wood ear mushrooms and sauté for about 3-4 minutes. Add the broccolini and cook until charred and tender, about 5-7 minutes. Season with salt and pepper.

Assemble the Ramen

In bowls, place the cooked ramen noodles, top with sliced char siew, halved ajitama eggs, sautéed wood ear mushrooms, and charred broccolini. Garnish with chopped green onions.
