1. Prep the chocolate

Place 24 oz of semisweet chocolate chips or chopped chocolate in a heatproof mixing bowl. Add 3 tablespoons coconut oil, 1 tablespoon neutral vegetable oil (optional for thinner flow), and 1 tablespoon light corn syrup (optional for sheen and smoother texture).

2. Melt gently

Set the bowl over a pot of gently simmering water (double boiler) ensuring the bottom of the bowl does not touch the water. Stir constantly with a spatula until the chocolate is fully melted and smooth, about 6–10 minutes. If using a microwave: heat in 20–30 second bursts at 50% power, stirring between bursts until fully melted and smooth.

3. Adjust consistency

Check the viscosity: the chocolate should flow like warm honey. If too thick, stir in additional neutral oil 1 teaspoon at a time (up to 2 tablespoons total) until desired flow is reached. If too thin, remove from heat and let cool slightly; do not add water.

4. Keep warm

Transfer the melted chocolate to the fountain's base reservoir while still warm. Use a spatula to scrape bowl clean.

5. Assemble and preheat the fountain

Assemble the chocolate fountain following the manufacturer's instructions. Place the fountain on a stable, level surface near power. Plug in and turn on the motor to ensure it runs unobstructed. Turn on the heater (if separate) or preheat per your model's instructions until reservoir reaches the recommended operating temperature (usually around 110–120°F / 43–49°C).

6. Pour chocolate into reservoir

With the motor running, pour the warm melted chocolate slowly into the center of the reservoir. Allow the auger to lift chocolate; it will flow over the tiers and form a smooth curtain. If any air pockets occur, gently tap the base or add a little more melted chocolate to maintain flow.

7. Fine-tune flow

If the chocolate batches break or clump, turn off motor, stir reservoir chocolate to reincorporate, then restart. Maintain the fountain at operating temperature; add reserved melted chocolate or 1–2 tablespoons neutral oil if flow thickens over time.

8. Safety & cleanliness

Keep the fountain covered when not in use to retain heat. Do not allow water to enter the reservoir or motor. Replace reservoir chocolate every 3–4 hours for best quality and hygiene; discard chocolate that has been dipped into repeatedly for long periods or contaminated.

9. Prepare dippers

Wash and hull strawberries. Cut pineapple into bite-size chunks. Slice bananas into 1-inch pieces and toss briefly in a little lemon juice to slow browning (optional). Cut cake into 1-inch cubes. Arrange all dippers—strawberries, pineapple, bananas, marshmallows, pretzel rods, cake—on platters or bowls near the fountain.

10. Provide tools and instructions

Place skewers or fondue forks within easy reach. Instruct guests to spear a dipper, gently swirl under the flowing chocolate for 1–3 seconds to coat, then lift and allow excess chocolate to drip back before enjoying. Encourage using a plate or napkin under dippers to catch drips.

11. Refill and monitor

Monitor chocolate level and refill with warmed melted chocolate as needed. If chocolate cools or thickens over the event, reheat gently in a microwave-safe container or over a double boiler, then add to the reservoir while the motor runs.

12. Shutdown and cleaning

When finished, turn off motor, then heater if present. Allow remaining chocolate to cool slightly but remain fluid; pour excess into a heatproof container for disposal or reuse. Disassemble fountain parts once cooled enough to handle and clean per manufacturer instructions—usually soaking in warm, soapy water to remove chocolate, then hand-wash and dry. Never immerse motorized base in water.
