Dry shake
In a cocktail shaker add 2 oz Writers' Tears Copper Pot, 0.75 oz fresh lemon juice, 0.5 oz honey syrup, 0.25 oz orgeat or Amaretto (if using), 2 dashes Angostura bitters, and 1 egg white (if using). Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify and build a silky foam.
Wet shake
Open the shaker, add ice (enough to fill the shaker about two-thirds). Seal and shake again vigorously for 10–15 seconds until well chilled and the exterior of the shaker becomes frosty.
Prepare glass
Fill a rocks glass or copper mug with crushed ice (or a large clear ice cube if you prefer). If using a copper mug, warm briefly with your hand so it doesn't fog the foam.
Strain
Double-strain the cocktail over the prepared ice using a Hawthorne strainer and a fine mesh strainer to capture the egg white foam, pouring gently so the foam sits on top of the ice.
Garnish & Finish
Express a lemon twist over the drink by holding the twist over the surface and giving it a sharp fold to release oils, then run the peel around the rim and drop it onto the foam.
Add 2 small dashes of Angostura bitters on the foam (from earlier you may have omitted or used only in the mix) and, if desired, gently swirl with a toothpick to create a pattern.
Lightly grate a small amount of fresh nutmeg or cinnamon over the top for an aromatic finish, if desired.
Serve immediately with a short straw or stirrer and enjoy.
