Build the base
In a mixing glass or shaker filled with fresh ice, combine Aperol (1 oz), fresh lemon juice (0.5 oz), and simple syrup (0.25 oz). Stir or shake briefly — about 8–10 seconds — until well chilled and slightly diluted.
Add beer
Discard the ice/water from the chilled serving glass if used. Fill the glass about three-quarters full with fresh ice (or use no ice if you prefer less dilution). Pour the chilled Peroni Capri (4 oz) into the mixing glass/shaker with the Aperol mixture and gently roll or stir once to integrate the beer without flattening it. Alternatively, you can first pour the Aperol mixture into the serving glass and slowly top with Peroni to preserve carbonation.
Assemble
If you used the mixing glass method, strain the combined cocktail into the chilled serving glass over ice. If you built directly in the serving glass, simply stir gently once to combine. Aim for a light, even orange tint from the Aperol distributed through the beer.
