Make honey syrup

If you don't have honey syrup prepared, combine equal parts honey and warm water (for this recipe: 1/2 oz honey + 1/2 oz warm water), stir until fully combined and cool slightly. Use 0.5 oz of this syrup in the cocktail.

Build and shake

Add Ungava gin (2 oz), limoncello (1 oz), fresh lemon juice (0.75 oz) and honey syrup (0.5 oz) into a cocktail shaker. Add a generous handful of ice (about 1 cup). Shake vigorously for 12–15 seconds until the outside of the shaker feels very cold.

Strain and top

Double-strain (fine mesh optional) the shaken mixture into a chilled highball or Collins glass filled with fresh ice. Top with about 2 oz soda water. Give one gentle stir to combine.

Bitters finish

Add 2 dashes of Angostura bitters over the top of the drink. The bitters will create subtle aromatic 'tears' and visual streaking down the glass.

Garnish & Serve

Express a lemon twist over the drink to release oils, then rub it on the rim and drop it in. Optionally float a lemon wheel on top for presentation.

Serve immediately with a short stirring straw. Estimated flavor profile: bright citrus from limoncello and lemon, floral juniper from Ungava gin, gentle sweetness from honey syrup, effervescence from soda, and a spice/bitters finish.
