Prepare glass

Run a lime wedge around the rim of a rocks or coupe glass. Dip the rim into coarse salt to create a thin salt rim. Set the glass in the freezer or fill briefly with ice to chill while you build the cocktail.

Muddle ginger

In a cocktail shaker, add the freshly grated ginger and the agave syrup. Gently muddle or press the ginger against the side of the shaker with a muddler or the back of a spoon for about 10–15 seconds to extract the aroma and flavor, but not so much to make it bitter.

Combine ingredients

Add the blanco tequila, fresh lime juice, Cointreau, and 2 dashes of orange bitters into the shaker with the muddled ginger. Fill the shaker with ice (about 3/4 full).

Shake

Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker becomes very cold and slightly frosted. This chills and dilutes the drink to the right balance.

Double strain and serve

Discard any ice from the chilled glass. Double-strain the cocktail into the prepared glass using a Hawthorne strainer and a fine mesh strainer to remove ginger fibers and small ice shards. If you prefer, serve over one large ice cube in a rocks glass or neat in a chilled coupe.

Garnish

Express the oils of a lime wheel over the drink by gently squeezing it, then drop the wheel onto the rim or float it on top. Optionally add a final dash of orange bitters on the foam or surface for aroma.
