Method
Cocktail
Combine and chill
Add 2 oz Malibu rum, 1 oz Soho lychee liqueur, 3 oz fresh pineapple juice, 0.5 oz fresh lime juice, and 0.25 oz simple syrup to a cocktail shaker. Fill the shaker with ice (about 1 cup).
Shake
Shake vigorously for 12–15 seconds until the outside of the shaker is cold and well-chilled, and the mixture is slightly diluted and well-mixed.
Glass/Serve
Fill a highball or Collins glass with fresh ice (about 1 cup).
Strain the shaken cocktail over the ice into the prepared glass using a fine strainer or cocktail strainer to remove small ice shards and any pulp.
Garnish
Garnish the drink with a pineapple wedge on the rim and a lime wheel. Optionally drop a maraschino cherry into the glass for color and an extra sweet note.
Serve immediately with a cocktail straw. Stir gently once before sipping to integrate garnish juices.
