Method
Cocktail Assembly
Chill glass
Place an old-fashioned glass in the freezer or fill it with ice and water while you prepare the cocktail to lightly chill the glass.
Combine spirits and modifiers
In a mixing glass add 2 oz Pike Creek (or your chosen Canadian whiskey), 0.5 oz rye whiskey, 0.25 oz aged rum, and 0.25 oz demerara syrup. The small addition of rye brings spice; the aged rum echoes Pike Creek's sweet/rum cask influence and deepens complexity.
Add bitters
Add 3 dashes Angostura bitters and 1 dash orange bitters to the mixing glass.
Stir with ice
Fill the mixing glass with enough ice to chill the liquid thoroughly (about 3/4 full). Stir gently for 30–40 seconds until the mixture is well-chilled and slightly diluted. The stir time builds texture and smooths the spirits.
Prepare serving glass
Dump the ice/water from your chilled old-fashioned glass and add a single large ice cube or sphere.
Strain
Double-strain (fine mesh optional) the mixed cocktail over the large ice cube in the chilled glass to remove any small shards of ice.
Garnish
Express an orange peel over the drink by holding the peel skin-side down near the cocktail and giving it a quick twist to release oils. Rub the peel along the rim of the glass and drop it into the drink.
Optional Flame-Toast (Double-Barreled Finish)
If you want the ‘double-barreled’ theatrical flourish, pour 0.25 oz high-proof rum into a small heatproof spoon or measure. Carefully ignite the spirit with a match or lighter and hold it briefly over the cocktail to warm the top layer and gently scent the drink with toasted sugar/char notes (do not attempt if you are uncomfortable with flame service). Extinguish the flame by placing a small metal cap over it or letting it burn out quickly. Pour the spent spirit (if any remains) away from guests, then finish by expressing the orange twist over the warmed surface.

Serve immediately. This cocktail is best enjoyed slowly — the large ice cube melts slowly and the layered spirits show nuanced aromas. Adjust sweetness by changing the demerara syrup between 0.25–0.5 oz. If you skipped the rye, increase Pike Creek to 2.5 oz for a simpler two-ingredient base.
