Chill glass

Place a coupe or Nick & Nora glass (or an Old Fashioned glass if preferred) in the freezer for a few minutes or fill it with ice water while you prepare the drink to chill it.

Fill a mixing glass or cocktail shaker with large ice cubes. Use large cubes to minimize dilution while chilling and lightly diluting the drink.

Measure and pour 2 oz Bushmills Black Bush, 0.75 oz sweet vermouth and 0.25 oz Aperol (or Campari) into the mixing glass.

Add 2 dashes of Angostura bitters to the mixing glass.

Stir the mixture with a bar spoon for about 30–45 seconds (roughly 20–30 full turns) until well chilled and properly diluted. Stirring rather than shaking keeps the texture smooth and clear.

Discard the ice or water from your chilled glass and strain the stirred cocktail into the chilled glass using a Hawthorne or julep strainer.

Express the oils from the orange peel over the drink by holding the peel skin-side down above the surface and giving it a firm twist, then rub the peel around the glass rim and drop it into the cocktail as a garnish.

Serve immediately. Optionally offer a glass of water alongside.
