3:1 Demerara Simple Syrup (makes ~8 oz)
Method
3:1 Demerara Simple Syrup

Combine sugar and water
Place 3 cups demerara sugar and 1 cup water in a small saucepan.

Heat to dissolve
Warm gently over medium-low heat, stirring frequently until the sugar is completely dissolved and the liquid is clear, about 3–5 minutes. Do not boil vigorously.

Cool and store
Remove from heat, let cool to room temperature, then transfer to a clean bottle or jar. Refrigerate; syrup will keep for 2–3 weeks.
Cocktail Assembly

Prepare glass and ingredients
Chill an old-fashioned (rocks) glass if desired. Have your large ice cube, bourbon, demerara syrup, bitters, orange peel, and sour cherry ready.

Add syrup and bitters
Pour 1/2 oz (15 ml) 3:1 demerara syrup into the glass, then add 3 dashes of aromatic bitters.

Add bourbon and stir
Add 2 oz (60 ml) Jeppson's Single Barrel bourbon to the glass. Add a large ice cube, then stir gently for 20–30 seconds (about 15–20 full rotations) to chill, slightly dilute, and marry the ingredients.

Garnish with sour cherry
Place one sour cherry on a cocktail pick or drop it into the drink alongside the orange peel.

Serve immediately. Sip slowly to enjoy the balance of rich bourbon, demerara sweetness, and aromatic bitters.
