Prepare and dry shake

Add Three Spirit Social, fresh grapefruit juice, simple syrup, lime juice and egg white (if using) to a cocktail shaker without ice. Dry shake vigorously for 20–30 seconds to emulsify and build foam.

Wet shake

Open the shaker, add a generous handful of ice (about 1 cup) and seal. Shake hard for 12–15 seconds until the outside of the shaker is frosty and well chilled.

Strain

Double strain the mixture (use a Hawthorne and a fine mesh strainer) into a chilled Collins or highball glass filled halfway with fresh ice to remove ice shards and ensure a silky texture.

Top / Garnish

Add soda

Gently top the strained cocktail with about 3 oz chilled club soda. Pour slowly over the back of a spoon or down the inside of the glass to preserve the foam layer.

Bitters (optional)

If using bitters, add 1–2 dashes on top of the foam for aroma and a subtle bitter lift.

Garnish and serve

Express a grapefruit twist over the drink to release oils, then drop it or perch a wedge on the rim. Serve immediately with a straw if desired.
