Method
Lobster & Stock
Cook lobsters
Bring a large pot of salted water to a rolling boil. Add 1 cup white wine and the live lobsters (or lobster tails). Cover and cook lobsters 8–10 minutes for 1.5–2 lb whole lobsters (or 4–6 minutes for tails) until shells turn bright red and meat is opaque. Remove lobsters and cool enough to handle.
Reserve lobster meat: Crack shells and remove meat from tails, claws and knuckles. Chop meat into bite-sized pieces (reserve about 1 cup for garnish). Refrigerate reserved meat. Keep shells.
Make quick lobster stock: In a large pot, melt 2 tbs butter over medium heat. Add lobster shells and sauté 4–5 minutes to deepen color, stirring and pressing shells to release juices. Pour in 8 cups cold water and remaining 1/2 cup white wine (if any), add bay leaves, peppercorns and 1 tsp salt. Bring to a simmer, then reduce heat and gently simmer 30–40 minutes, uncovered, skimming foam occasionally.
Strain stock through a fine-mesh sieve into a clean pot or bowl, pressing on shells to extract liquid. Discard shells and solids. Keep stock warm.
Mirepoix & Aromatics
In a heavy-bottomed saucepan or Dutch oven, melt 3 tbs unsalted butter over medium heat. Add diced onion, carrots and celery. Sauté 6–8 minutes until vegetables are softened and translucent but not browned.
Add minced garlic and sauté 30–45 seconds until fragrant. Stir in 2 tbs tomato paste and cook 2 minutes to caramelize the paste slightly.
Add 1 cup crushed tomatoes (or 1 peeled chopped tomato) and stir to combine. Cook 4–5 minutes to meld flavors.
Thickening & Finish
Make a roux-thickener: Sprinkle 2 tbs all-purpose flour over the softened vegetables and stir to coat. Cook 1–2 minutes, stirring, to remove raw flour taste.
Gradually whisk in the warm strained lobster stock (about 4–5 cups to start) until smooth. Bring mixture to a gentle simmer and cook 15–20 minutes, stirring occasionally, until slightly thickened and flavors have concentrated. If soup is too thick, add more stock to reach desired consistency (target final volume ~6 cups).
For a perfectly smooth bisque, use an immersion blender to purée the soup directly in the pot until silky. Alternatively, carefully transfer in batches to a blender and purée until very smooth, then return to pot. Strain through a fine-mesh sieve for extra silkiness, pressing solids to extract flavor.
Reduce heat to low. Stir in 1 cup heavy cream and 1 tbs unsalted butter. Warm gently—do not boil after adding cream. Taste and finish with 1 tsp salt, 1 tsp freshly ground black pepper, 1 tsp lemon juice and 1 tbs chopped fresh tarragon (or thyme). Adjust seasoning as needed.
Garnish (optional)
Stir a portion of the reserved chopped lobster meat into the bisque to warm for 1–2 minutes, or reserve the meat for topping individual bowls.
Ladle bisque into bowls. Top each serving with some reserved lobster meat, a sprinkle of chives, and a light dusting of cayenne or smoked paprika for color and heat. Serve immediately with crusty bread.
