Pasta and Cannabis-Infused Sauce

Bring pasta water to a boil
Fill a large pot with 4–5 quarts (approximately 4–5 liters) of water and bring to a rolling boil. Add 1 tablespoon salt to the water. Add the 12 oz gigli pasta and cook according to package instructions until al dente (usually 8–10 minutes). Reserve 1/2 cup of the starchy cooking water, then drain the pasta and set aside.

Sauté aromatics
While the pasta cooks, heat 4 tbsp unsalted butter in a large skillet over medium heat until melted and foamy. Add the finely minced garlic and diced shallot and sauté, stirring, for 1.5–2 minutes until fragrant and softened but not browned.

Add cream and reduce
Lower heat to medium-low. Pour in 1 cup heavy cream and bring to a gentle simmer. Let the cream reduce for 3–4 minutes, stirring occasionally, until slightly thickened.

Incorporate cannabis butter and seasoning
Stir in 2 tbsp cannabis-infused butter (measured so that the final plated recipe yields approximately 5 mg Delta-9 THC per serving — see recipe note). Add 2 tsp fresh lemon juice, 1.5 tsp salt, and 1/2 tsp black pepper. Stir until the infused butter is fully melted and incorporated and the sauce is smooth.

Combine pasta and sauce
Add the drained gigli to the skillet with the sauce. Toss gently to coat. Add up to 1/2 cup reserved starchy pasta water a few tablespoons at a time as needed to loosen the sauce and help it cling to the pasta. Continue tossing for 1–2 minutes until the pasta is heated through and sauce is glossy and emulsified.

Finish with cheese and herbs
Remove the skillet from heat. Stir in 3 oz finely grated parmesan cheese and 2 tbsp chopped fresh parsley. Adjust seasoning to taste with additional salt and pepper if needed.
Optional Garnish & Serving

Plate the gigli into 4 even servings. Sprinkle each portion with a pinch (about 1/16 tsp) red pepper flakes if using, an extra sprinkle of grated parmesan (divide the 1/4 cup among servings), and a small amount of lemon zest for brightness. Garnish with additional chopped parsley if desired.

Serve immediately, reminding diners that each serving contains approximately 5 mg Delta-9 THC. Consume responsibly and wait at least 90–120 minutes to assess effects before considering additional intake.
