If using ice water to chill, discard the water just before building the cocktail.
Build Cocktail

Fill the chilled highball glass about two-thirds with large ice cubes or a large single sphere. Large ice melts slower and keeps the drink crisp.

In a mixing glass or small shaker without ice, add 2 oz Diega Amarilla gin, 0.5 oz Accompani Flora Green, 0.5 oz fresh lime juice, and 0.25 oz simple syrup if you prefer a touch of sweetness. The simple syrup is optional; omit for a drier, more herbal profile.

Gently stir the mixture in the mixing glass for 10–15 seconds to marry flavors (no need to dilute much since tonic will add volume). If you used ice in the shaker, stir until slightly chilled — about 10 seconds — then strain.

Strain the gin, aperitif, and lime mixture into the prepared glass over the ice.

Express a lime wheel or wedge over the drink by squeezing gently to release essential oils, then rub the rim with the peel and drop it into the glass.

Float an edible flower or a small sprig of micro herbs on top for a floral visual and subtle aroma.

Serve immediately with a long stirring straw. Advise the drinker to stir once or twice before sipping to integrate tonic and aromatics.
