Prepare Duck Breast

Season the Duck

Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season with salt, pepper, and five-spice powder.

Sear the Duck

In a cold skillet, place the duck breasts skin-side down and turn the heat to medium. Sear for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-5 minutes, then remove from the pan and let rest.

Make Duck Confit Croquettes

Combine Ingredients

In a bowl, mix duck confit and mashed potatoes. Form the mixture into small balls, then dip into egg and coat with breadcrumbs.

Fry Croquettes

Heat oil in a frying pan. Fry croquettes until golden brown on all sides. Remove and drain on paper towels.

Prepare Bitter Greens

Toss the Greens

In a large bowl, combine arugula and radicchio. Drizzle with olive oil and balsamic vinegar, and toss to combine.

Cook Wild Mushrooms and Red Wine Cherries

Sauté Mushrooms

In a skillet, melt butter over medium heat. Add wild mushrooms and sauté until tender. Add red wine and cherries and simmer until reduced.

Make Foie Gras Jus

Prepare the Jus

In a saucepan, sauté shallots in butter until soft. Add foie gras trimmings and chicken stock, then add thyme. Simmer for 20 minutes and strain.
