Method
Crab Rangoon Filling
Prepare aromatics
Finely mince the garlic and yellow onion. Thinly slice the green onions. This ensures a smooth, well-distributed filling texture.
In a medium mixing bowl, soften the cream cheese by stirring it until smooth (use a spatula or small whisk).
Add the flaked real crab meat to the softened cream cheese. Fold gently to combine so crab stays in noticeable pieces.
Mix in the minced garlic, minced yellow onion, sliced green onion, soy sauce, sesame oil, granulated sugar, white pepper, and 1/4 tsp salt. Taste and adjust seasoning carefully — the crab is delicate. The filling should be creamy, well-seasoned, and slightly springy.
Cover the bowl and refrigerate the filling for at least 20 minutes to firm up slightly, which makes wrapping easier.
Wrappers & Assembly
Set out wonton wrappers on a clean tray and keep them covered with a damp towel to prevent drying.
Beat the egg in a small bowl to make egg wash. Alternatively, use cold water as a sealant for a lighter finish.
Spoon about 1 tablespoon of filling onto the center of each wonton wrapper. (For 8 rangoon, you will use two wrappers per piece if making a folded purse shape; the recipe yields 8 finished pieces.)
Place assembled rangoon on a parchment-lined tray and refrigerate uncovered for 10–15 minutes to help the wrappers firm and hold shape.
Frying
Pour enough neutral oil into a medium saucepan or deep skillet to reach about 1.5–2 inches deep (approximately 1 to 1.25 cups depending on pan size). Heat oil over medium-high heat to 350°F (175°C). If you don’t have a thermometer, test with a small piece of wrapper — it should sizzle and brown in about 30–40 seconds.
Use a slotted spoon to remove rangoon and drain on a wire rack or paper towel-lined plate. Let rest 1–2 minutes before serving to avoid excessively hot filling.
Sauce (LOFT Apple Sweet Chilli Style)
Combine apple jam, rice vinegar, and sweet chili sauce with 2 tablespoons water in a small saucepan over medium heat. Stir until the jam dissolves and the mixture is smooth.
Mix cornstarch with an additional 1 teaspoon of cold water to make a slurry. Add the slurry to the sauce and simmer for 1–2 minutes until slightly thickened. Adjust salt to taste. Remove from heat and let cool slightly; it will thicken further as it cools.
Transfer sauce to a small serving dish for dipping alongside the hot rangoon.
Plating & Serving
Arrange 8 crab rangoons on a warm serving plate. Place a small ramekin of LOFT Apple Sweet Chilli Sauce on the side. Garnish with sliced green onions or a light dusting of sesame seeds if desired.
Serve immediately while the rangoon are hot and crisp. Provide napkins — the interior will be creamy and hot.
