Prepare filling

In a medium bowl, beat the softened cream cheese until smooth. Add mayonnaise and mix until combined and creamy.

Stir in the flaked real crab meat, making sure there are no large lumps of shell or cartilage. Fold gently to avoid overworking the crab.

Add the minced garlic, finely minced shallot/onion, sliced scallions, soy sauce, sesame oil, sugar, lime juice (if using), white pepper and a pinch of salt. Mix until evenly combined. Taste and adjust seasoning; mixture should be slightly salty-sweet with a gentle garlic note. Chill the filling in the refrigerator for 15–20 minutes to firm up slightly (this makes wrapping easier).

Assembling

Set up an assembly station with the wonton wrappers stacked, a small bowl of cold water for sealing, and a spoon or small cookie scoop for the filling.

Place one wrapper on a clean surface. Put about 1 teaspoon (heaping) to 1 tablespoon (depending on wrapper size) of the chilled crab-cream cheese filling in the center. Avoid overfilling to prevent splitting when frying.

Dip your finger in cold water and moisten the edges of the wrapper. Fold the wrapper: for a classic Rangoons fold two opposite corners together and press to seal, or bring four corners up and pinch to form a small purse. Ensure the edges are well sealed and there are no air pockets. Repeat with remaining wrappers and filling. Place assembled rangoons on a parchment-lined tray and keep chilled until ready to fry.

To Fry

Heat vegetable oil in a deep-fryer or a heavy-bottomed pot to 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of wonton wrapper into the oil — it should sizzle and float up steadily, browning in about 45–60 seconds.

Fry the rangoons in small batches (4–6 at a time, depending on pot size) for 2–3 minutes, turning as needed, until they are golden brown and crisp. Avoid overcrowding which lowers oil temperature.

Using a slotted spoon or spider strainer, remove rangoons and transfer to a wire rack or paper towel–lined tray to drain excess oil. Keep warm in a low oven (200°F / 95°C) if frying in multiple batches.

Sauce (LOFT Apple Sweet Chilli style)

Combine the sweet chili sauce and apple jam (or apple butter) in a small bowl. Whisk in rice vinegar, soy sauce and grated ginger until smooth. Taste and adjust balance: add more apple jam for sweetness, more vinegar for tang, or a pinch of salt if needed.

Transfer sauce to a small serving bowl. Serve warm or room temperature alongside the hot crab rangoons.

To Serve

Arrange 4–6 crab rangoons per plate depending on portion size. Garnish with extra sliced scallions or a light dusting of toasted sesame seeds if desired. Serve immediately with LOFT Apple Sweet Chilli Sauce for dipping.
