Prepare aromatics
Finely mince the garlic and shallot. Slice the scallion green parts thinly and set aside a teaspoon for garnish.
In a medium bowl, combine the softened cream cheese with the egg yolk and beat lightly until smooth and spreadable.
Fold in the picked crabmeat, minced garlic, minced shallot, and sliced scallion. Add light soy sauce, sesame oil, ground white pepper, sugar, and salt. Gently fold until evenly distributed—avoid over-mixing to keep lumps of crab intact. Taste and adjust seasoning if needed. Chill the filling for 10 minutes to firm slightly (this makes filling and sealing easier).
Wrappers & Assembly
Prepare egg wash by beating 1 whole egg with 1 tsp water until smooth. Keep a small bowl of water if you prefer water sealing.
Lay a wonton wrapper on a clean flat surface. Lightly dust the center with a pinch of flour (this helps prevent the wrapper from getting soggy). Place about 1.5 to 2 tablespoons of the crab-cream cheese filling in the center of each wrapper (you should get about 8 wrappers filled).
Brush the edges of the wrapper with egg wash (or dab with water). Fold the wrapper over the filling to form a triangle or rectangular pouch, pressing out excess air and sealing edges tightly. For a classic Rangoon look, bring two opposite corners together and press to seal, or pleat the edges as desired. Ensure each parcel is well sealed to prevent leaking.
Frying
Pour neutral oil into a deep pot to a depth of about 5–6 cm (enough to shallow-deep fry the rangoons) and heat to 175°C (350°F). If you do not have a thermometer, test by dropping a small piece of wrapper: it should sizzle and rise steadily.
Working in batches (2–3 pieces at a time to avoid temperature drop), carefully lower the chilled rangoons into the hot oil seam-side up. Fry for 3–4 minutes, turning occasionally, until evenly golden brown and crisp.
Use a slotted spoon to remove rangoons and drain on a wire rack or paper towel-lined plate. Keep warm in a low oven (90°C / 200°F) if frying multiple batches.
Sauce
While the oil heats or during the first frying batch, mix the sweet chili sauce with apple jam/puree, rice vinegar, lime juice and optional red chili flakes in a small bowl. Stir until smooth and taste—adjust acidity with more rice vinegar or lime if needed. Transfer to a small serving bowl.
Plate & Serve
Arrange 8 warm Crabmeat Rangoons on a serving plate. Place a small bowl of Loft-style apple sweet chili sauce on the side. Garnish the rangoons with the reserved sliced scallion and a light sprinkle of toasted sesame seeds (optional).
Serve immediately so rangoons remain crisp. Provide toothpicks if desired for easy picking.
