Prepare strawberries

Rinse and hull the strawberries. Roughly chop them and place into a blender or food processor.

Add the fresh lime juice and simple syrup to the chopped strawberries. Blend until smooth (about 20–30 seconds) to create a puree.

Strain the puree through a fine-mesh sieve into a bowl or measuring cup, pressing with a spoon to extract as much liquid as possible. Discard seeds and solids. You should have about 120–150 ml of smooth strawberry-lime base.

Taste and adjust sweetness or acidity: if too tart, stir in up to 1 tablespoon (15 ml) more simple syrup; if too sweet, add a squeeze of lime.

Fill two highball glasses or one large cocktail tumbler with ice, filling each about three-quarters full.

Divide the strained strawberry-lime base between the glasses (about 60–75 ml per glass).

Add 45 ml vodka to each glass (or 45 ml blanco tequila for a different profile).

Top each glass with 60 ml club soda. Gently stir once or twice with a bar spoon to combine without flattening the soda.

Taste and, if desired, add an extra 1–2 teaspoons (5–10 ml) simple syrup or an additional squeeze of lime for balance.

Thread a thin strawberry slice and a lime wheel on a cocktail pick or rest them on the glass rim.

Add a mint sprig to each glass for aroma, gently clap the mint between your palms first to release oils.

Serve immediately with a long spoon or straw.
