Prepare glass
Choose a tall pilsner or highball glass (12–16 oz). Fill the glass with cracked ice or ice cubes to chill.
Add the freshly squeezed lime juice and simple syrup directly into the glass over the ice.
Add 2 dashes of Angostura bitters over the ice and juices.
Pour in the ginger ale (about 2 oz) gently so it mixes with the lime and bitters.
Slowly top with 12 oz of cold light beer, pouring down the side of the glass or over the back of a spoon to preserve carbonation and create a modest head.
Give the drink a very gentle stir once or twice to integrate the ginger ale, lime and bitters with the beer without flattening it.
Garnish & Finish
Garnish the rim with a lime wheel or wedge. If using, slap the mint sprig between your palms briefly to release aroma and tuck it against the garnish.
Serve immediately with a short straw. Encourage the drinker to sip rather than stir repeatedly to maintain effervescence.
