Prepare jalapeños

Wear gloves if desired. Rinse the jalapeños and pat dry. Slice each jalapeño in half lengthwise. Using a small spoon or a melon baller, carefully scoop out the seeds and membranes to reduce heat (leave some membranes if you prefer hotter). Set halves cut-side up on a tray.

Make filling

In a medium mixing bowl, combine the softened cream cheese, shredded sharp cheddar, chopped cilantro, minced garlic, ground cumin, salt, and black pepper. Mix thoroughly with a spatula or electric mixer until smooth and homogenous. Taste and adjust seasoning if needed.

Fill peppers

Using a small spoon or piping bag, fill each jalapeño half with the cream cheese mixture, mounding slightly but keeping the filling below the rim so it doesn't overflow during cooking. Place filled halves back on the tray.

Set up breading station

Place the flour in a shallow bowl and season lightly with a pinch of salt. Beat the eggs in a second shallow bowl. In a third bowl, combine panko breadcrumbs, paprika, and cayenne pepper (if using).

Bread the filled jalapeños

One at a time, gently dredge each filled jalapeño half in flour, shaking off excess. Dip into the beaten eggs, then press into the panko mixture until evenly coated. Set on a baking sheet or wire rack. For a thicker crust, double-dip: return to egg then panko again.

Frying / finishing

Fry (deep-fry method)

Pour vegetable oil into a deep, heavy-bottomed pan to a depth of about 1 to 1.5 inches (enough to cover half to two-thirds of the pepper if shallow frying) and heat to 350°F (175°C). Fry the breaded jalapeño halves in batches for 2–3 minutes per side until golden brown and crispy. Use a slotted spoon to transfer to a paper towel–lined tray to drain. Let rest 2 minutes before serving.

Oven-baked option

Preheat oven to 425°F (220°C). Place breaded jalapeños on a baking sheet lined with parchment and lightly spray or brush with olive oil. Bake 12–16 minutes, turning once halfway, until golden and cheese is hot and filling is set. For softer peppers with less browning, bake at 400°F (200°C) for 16–20 minutes.

Air-fryer option

Preheat air fryer to 375°F (190°C). Arrange breaded jalapeños in a single layer without overlapping, spray lightly with oil, and air-fry 8–10 minutes, turning once, until crisp and golden.

Serve

Transfer finished cream cheese jalapeños to a serving plate. Serve warm with lime wedges on the side. Optional: garnish with extra chopped cilantro or a drizzle of ranch or hot sauce.
