Muddle thyme and combine
In a cocktail shaker, add the fresh thyme leaves and simple syrup. Gently muddle the thyme with the back of a spoon or a muddler about 6–8 times to release the oils—do not pulverize into bits.

Add liquids
Add the gin, fresh grapefruit juice, and fresh lime juice to the shaker with the muddled thyme and syrup.

Shake with ice
Add ice (about 6 cubes) to the shaker. Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is chilled and slightly frosted.

Fine-strain
Double-strain the cocktail into a chilled coupe or a rocks glass filled with fresh ice (4 cubes) using a Hawthorne strainer and a fine mesh strainer to remove thyme bits and ice shards.
Garnish & Serve

Express a grapefruit twist over the drink to spray oils across the surface, then rub the twist on the rim and drop it in (or float a grapefruit wheel). Finally, slap the thyme sprig between your palms to wake the aroma and place it as a garnish on top of the drink.
