Orange-Vanilla Syrup
Combine ingredients
In a small saucepan combine 1 cup fresh orange juice, 1 cup granulated sugar, 1/4 cup water, and the orange zest. If using a vanilla bean, scrape the seeds into the pan and add the scraped pod as well. If using vanilla extract, wait to add it after heating.
Simmer briefly
Lower the heat and let the mixture simmer gently for 3 minutes to concentrate flavors. If using a vanilla bean pod, keep it in while simmering.
Cool and finish
Remove the pan from heat. If you used vanilla extract instead of a bean, stir in 1 teaspoon vanilla extract now. Discard the vanilla pod and strain the syrup through a fine mesh sieve into a heatproof container to remove zest and any solids. Let the syrup cool to room temperature, then chill in the refrigerator. Yield: about 1 to 1 1/4 cups syrup.
Assembly & Serve
Prepare glass
Fill a tall glass with 1 cup of ice cubes.
Add syrup
Measure and drizzle 2.5 tablespoons (≈37 ml) of the chilled orange-vanilla syrup over the oat milk. Adjust sweetness to taste: use 2 tablespoons for less sweetness or up to 3 tablespoons for a sweeter drink.
Garnish and finish
Optionally sprinkle 1/4 teaspoon of vanilla bean scrapings on top for aroma. Garnish with an orange wheel or twist on the rim. Serve immediately with a straw or stirring stick so the drink can be mixed to taste.
