Optional glass rim
If using smoked sea salt, rub a cut citrus wedge around the rim of an old-fashioned glass, then dip lightly into smoked sea salt. Set glass aside.
Add mezcal, amaro, Luxardo maraschino, blood orange juice, lemon juice, simple syrup, Angostura bitters, and egg white (if using) into a cocktail shaker without ice.
Dry shake vigorously (no ice) for 15–20 seconds to emulsify the egg white and create a velvety foam.
Add a large handful of ice to the shaker and shake again vigorously for 12–15 seconds to chill and slightly dilute the cocktail.
Strain the cocktail through a fine mesh strainer (double strain if you used fresh juice/pulp) into the prepared old-fashioned glass over one large ice cube.
Garnish with a dehydrated blood orange wheel or a fresh blood orange twist and drop in a Luxardo maraschino cherry. Optionally express an orange peel over the drink before placing the garnish to add aromatic oils.
Serve immediately.
Notes
If you prefer less smoke, substitute mezcal with reposado tequila. Adjust simple syrup to taste depending on the sweetness of the blood orange.
For a vegan version, omit the egg white and use 0.25 oz aquafaba instead; dry shake and shake with ice the same way.
