Special Sauce

    Combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, apple cider vinegar, garlic powder, onion powder and hot sauce (if using) in a small bowl. Whisk until smooth and chill for at least 15 minutes so flavors meld. Makes about 3/4 cup.

Fries

    Preheat oven to 425°F (220°C). Spread frozen fries on a rimmed baking sheet in a single layer and toss with 2 tbsp vegetable oil. Bake for 18–25 minutes, flipping once halfway, until golden and crisp. Remove from oven and season with 1/2 tsp kosher salt. Keep warm.

    Form patties

    Divide the 1 lb ground beef into 4 equal portions (about 4 oz each). Gently form each portion into a 3.5–4 inch patty about 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to prevent excessive puffing during cooking. Do not overwork the meat.

    Season

    Season both sides of the patties evenly with kosher salt and freshly ground black pepper just before cooking.

    Toast buns

    Heat a large skillet or griddle over medium-high heat. Spread 1 tbsp softened butter over the cut sides of the brioche buns (approx. 1/2 tbsp per cut side). Place buns, cut-side down, on the hot skillet and toast until golden, about 1–2 minutes. Remove and set aside.

    Cook patties

    Increase heat to medium-high. Add a light coating of oil to the pan if it’s dry. Place patties on the hot surface and cook undisturbed for 3 minutes. Flip and immediately place a slice of American cheese on each patty. Cook another 2–3 minutes for medium (adjust time for desired doneness). For extra melting, cover the pan for the last 30–60 seconds.

    Assemble burgers

    Place bottom bun on a plate, spread about 1–2 tbsp of the special sauce on the bottom bun. Add a lettuce leaf, then the cheeseburger patty. Top the patty with 2 slices of bread & butter pickles and a few rings of red onion. Spread 1 tbsp special sauce on the top bun and place it over the burger. Serve immediately with hot fries.
