Boil liquid

In a medium saucepan bring 4 cups water and 1 cup whole milk to a gentle boil over medium-high heat. Add 1 teaspoon kosher salt and 1/4 teaspoon black pepper to the liquid.

Add grits

Slowly pour 1 cup stone-ground grits into the simmering liquid in a steady stream while whisking or stirring constantly to prevent lumps.

Simmer and stir

Reduce heat to low so the grits maintain a gentle simmer. Cook, uncovered or partially covered, stirring frequently with a wooden spoon, for 20–30 minutes until the grits are thick, creamy, and the grains are tender. If grits absorb too much liquid and thicken before they are tender, add up to 1/2 cup hot water or milk, a few tablespoons at a time, until desired consistency is reached.

Finish with butter

Remove the saucepan from heat and stir in 2 tablespoons unsalted butter until melted and fully incorporated.

Optional Finishing (choose one or combine)

For cheesy grits: stir in 1/2 cup grated sharp cheddar cheese and 2 tablespoons softened cream cheese off the heat until smooth. If desired, add 2 tablespoons heavy cream for extra silkiness.

For garnishing: taste and adjust seasoning with additional salt or hot sauce (about 1 teaspoon) as desired. Sprinkle 1 tablespoon chopped chives or green onions over the top before serving.
