If you want a more subtle anise presence, pour the 0.75 oz absinthe into the chilled glass, swirl to coat the interior, then discard the excess (or pour back into a jigger if you prefer). For a more assertive flavor, proceed without rinsing and use the full 0.75 oz in the shaker.

Add the Kentucky bourbon, dry vermouth, fresh lemon juice, simple syrup, Angostura and orange bitters, and egg white (if using) into a cocktail shaker without ice.

Dry-shake (no ice) vigorously for 10–15 seconds to emulsify the egg white and create a silky texture.

Add large ice cubes to the shaker and shake again vigorously for 12–15 seconds until the shaker is very cold and slightly frosted.
Strain & Finish

Dump the ice and water from the chilled glass if you performed an absinthe rinse. Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to ensure a smooth texture.

Express the lemon peel over the drink to release oils: hold the peel over the surface, skin-side down, and give it a firm squeeze. Run the peel around the rim and drop it into the cocktail or place it on the rim.

Garnish with a small sprig of fresh mint tucked beside the lemon peel. Clap the mint between your hands once and set it atop the drink for aroma (do not muddle).
