Build & Shake

    Combine ingredients

    Add the amaro (2 oz), aged rum (1 oz), demerara syrup (0.5 oz) and fresh orange juice (0.5 oz) into a mixing tin. Add 2 dashes Angostura bitters and 1 dash chocolate/cacao bitters.

    Shake

    Fill the tin with ice and shake vigorously for 12–15 seconds until the tin is well chilled and slightly frosted. This both chills and dilutes the cocktail to the correct balance.

Strain & Serve

    Prepare glass

    Place a single large clear ice cube or sphere into a chilled old-fashioned or rocks glass.

    Double strain

    Double-strain the shaken cocktail into the glass over the large ice cube to remove small shards of ice and any pulp.

    Optional float

    If using bourbon as a flavor accent, gently float 0.25 oz bourbon on top by pouring slowly over the back of a bar spoon to create a layered aroma.

Garnish & Finish

    Express oils

    Take the orange peel and hold it over the drink. With the peel skin-side down, give it a firm squeeze to release the orange oils, then run the peel rim around the glass and drop it into the cocktail.

    Add cherry

    Skewer or drop one Luxardo/Amarena cherry onto/into the drink and rest it beside the ice cube.

    Serve immediately. The result should be a rich, dark, bitter-sweet amaro-forward cocktail with warm caramel and dark-fruit notes from the rum and demerara, brightened by orange and anchored by bitters.
