Chill components

Chill the bottle of sparkling wine and the orange juice in the refrigerator for at least 2 hours before serving. If you’re short on time, place the bottle and juice in an ice bath for 20–30 minutes until cold.

Prep garnishes and optional add-ins

Slice orange wheels and halve strawberries. If using peach purée, lightly strain to remove large solids and keep cold. Prepare simple syrup by combining equal parts sugar and hot water until dissolved; cool before using.

Set out a clean carafe or pitcher and champagne flutes (or glasses). If using crushed ice, have it ready to add to the carafe just before mixing so the juice stays cold without diluting the wine in each glass.

Pour the chilled orange juice into the carafe. If using crushed ice, add it to the juice now. If you prefer sweeter mimosas, stir in the simple syrup to the juice and taste to adjust sweetness — start with 1–2 tablespoons.

Pour the sparkling wine

To retain bubbles, open the sparkling wine carefully and pour it slowly into the carafe or directly into glasses. For a carafe-style mixed mimosa, add the bottle of chilled sparkling wine to the juice in the carafe and stir gently once with a long spoon to combine. Aim for a ratio of about 1 part sparkling wine to 1 part orange juice for a classic mimosa. Adjust ratio to taste (2:1 wine:juice for drier, 1:2 for fruitier).

Alternative: build in individual glasses

For individual serving, pour about 2–3 ounces (60–90 ml) of orange juice into each flute, then top gently with 2–3 ounces (60–90 ml) of sparkling wine. Pour the wine down the side of the glass to preserve effervescence. Do not stir vigorously.

Add garnishes and variations

Garnish each glass with an orange wheel or a strawberry halve on the rim. For a Bellini-style variation, spoon 1–2 tablespoons of peach purée into each glass and top with sparkling wine (skip the orange juice). Add a mint sprig if desired.

Serve immediately. Keep any remaining sparkling wine and juice chilled; combine additional batches as needed so the mimosas are fresh and bubbly.

Cleanup & storage

If you have leftover mixed mimosa in the carafe, drink within a few hours and keep refrigerated — note that fizziness will diminish over time. Store unopened sparkling wine and orange juice in the refrigerator per package instructions.
