Chocolate Crumble (Base)

Prepare oven and pan
Preheat oven to 350°F (175°C). Line the bottom of an 8- or 9-inch springform pan with parchment paper and lightly grease the sides.

Make crumble: In a medium bowl whisk flour, cocoa powder, granulated sugar, brown sugar, and salt until combined.

Cut in butter: Add cold cubed butter and use a pastry cutter or two forks to work it into the dry ingredients until mixture resembles coarse crumbs with some pea-sized pieces.

Bake crumble: Spread crumble evenly on the prepared pan bottom (press lightly to compact) or on a baking sheet if you prefer loose crumble to sprinkle. Bake for 12–15 minutes until set and fragrant. If making for a firm base, press warm crumble firmly into the pan bottom to form an even crust. Cool completely on a rack.
Chocolate Mousse

Melt chocolate: Place chopped chocolate in a heatproof bowl. Warm 1/2 cup heavy cream in a small saucepan until it simmers at the edges (do not boil). Pour hot cream over chocolate, let sit 1 minute, then whisk until smooth and glossy. Set aside to cool slightly.

Temper egg yolks
In a small bowl whisk egg yolks with granulated sugar until smooth and slightly pale. Slowly whisk about 2 tablespoons of the warm chocolate mixture into the yolks to temper, then whisk the tempered yolks back into the remaining chocolate until fully combined. Stir in vanilla and salt. Let mixture cool to lukewarm.

Whip cream: In a chilled bowl whip 1 1/2 cups cold heavy cream to medium peaks (soft but holding shape).

Fold mousse: Fold one-third of the whipped cream into the chocolate mixture to loosen it, then gently fold in remaining whipped cream in two additions until homogenous and airy. Do not overmix.

Assemble mousse layer: Spoon or pipe the mousse over the cooled chocolate crumble base in the springform pan, smoothing the top with an offset spatula. Chill in refrigerator at least 3 hours, preferably overnight, to set.
Pistachio Layer & Garnish

Make pistachio paste: Reserve about 2 tablespoons of the baked crumble if you like a textured contrast. In a food processor combine shelled pistachios, powdered sugar, melted butter and optional green food coloring. Blend to a coarse paste or smoother paste depending on preference (scrape down sides as needed). If too thick, add 1/2 tsp neutral oil or 1–2 tsp warm cream to loosen slightly.

Layering option: For a thin pistachio layer, gently spread a 1/4–1/3-inch layer of pistachio paste over the chilled mousse, then return to refrigerator 15–30 minutes. Alternatively, reserve the pistachio paste to pipe or dot on top as garnish.

Add texture: If you saved some crumble, sprinkle lightly between the mousse and pistachio layer or on top before finishing.
Mint Garnish & Finish

Unmold: Remove torte from refrigerator and run a thin knife around the inside edge of the springform pan to loosen. Release the ring and transfer cake on its parchment to a serving plate.

Glaze mint (optional): If using mint simple syrup, briefly brush a few mint leaves to gloss them and place them on top for freshness. Drizzle a little syrup over the pistachio layer for shine if desired.

Final decoration: Scatter cocoa nibs or shaved chocolate and small dollops of pistachio paste over the top. Arrange fresh mint leaves evenly. For a finished look, dust a light veil of powdered sugar around the edges or sift a light dusting of cocoa over part of the torte.

Serve: Chill until ready to serve. Slice with a hot clean knife (wipe between cuts) into 8–10 slices. Keep refrigerated; consume within 3 days.
